Exmoor is primarily an upland area made up mainly of small villages and hamlets. The largest settlements are Porlock, Dulverton, Lynton, and Lynmouth, Simonsbath and Wheddon Cross. |
This recipe is a slight adaptation of a recipe, originating in the Brendon Hills of West Somerset, and dates back to the end of the 19th century, possibly further. This one uses West Country lamb offal instead of the more Northern, and or Welsh variant made using pork heart and liver.
