Quantock Butter Biscuits Recipe from Somerset |
Exmoor is primarily an upland area made up mainly of small villages and hamlets. The largest settlements are Porlock, Dulverton, Lynton, and Lynmouth, Simonsbath and Wheddon Cross. |
This recipe is taken straight from the handwritten recipe book of my Great Grandmother, who was born and bred in the Brendon Hills of West Somerset, and is at least one hundred years old. Enjoy! Comments and suggestions for modern variations of the recipe most welcome. Four ounces of Flour Sieve the flour and rice flour into a basin, and rub in the butter; mix in the sugar, and bind the mixture to a stiff consistency with the egg and cream. Roll out thinly, prick with a fork, and cut into shapes.Place the biscuits on a tin, and bake in a steady oven for about fifteen minutes until of a pale brown colour. Cool the biscuits on a wire sieve.
